Black Pepper;
Black pepper is native to the Malabar Coast of India and is one of the first spices known. But black pepper actual comes of the vine green and can transform to different actors. Pepper is a phenomenon in jerky circles and depending on your taste pallette, the pepper world is literally your oyster.
When you think of Pepper in jerky this hot, earthy and complimentary to your flavour. Black pepper for instance gives a difference taste to white pepper and can leave a burning sensation in your mouth, similar to chilli.
White Pepper;

It’s a universal go to, like salt and pepper it can be found in literally every kitchen both domestic and commercial across the world. White pepper is ground after being picked ripe from the vine, then soaked to remove the skin. The processing then begins to form the powder component resulting in the white table pepper we see in ktichens today.
